~1lb firm tofu

~1/3 c smooth pasta sauce

~2/3 c italian breadcrumbs

1T minced garlic

~1/4c minced red onion

½
tsp ras el hanout (this is gonna vary a bit by where you buy it, but
you’re not gonna end up with a blend that won’t work here)

¼ tsp powdered cayenne pepper

Smash stuff together until it’s monochrome and not lumpy. It should be
roughly the consistency of uncooked hamburgers. Make patties. Place on
well-greased tray and bake 30m at 200C/400F, then flip and bake another
15-20m. They should wind up crisp and browned on the outside and soft on
the inside. Serve with … my judgement is suspect, but I went with
ketchup, sour cream, cucumber, and pickled olives.
