Heat the pan. Add the oil. Onions and garlic go in first. As those are starting to brown, add the pickles. You want to get the pickles a little brown where they touch the pan, so don’t stir too much. Put in the tofu and the seasonings. Mix WELL. Gotta make sure the seasonings are on everything. Cook another 10-15m, until the tofu loses a bit of water and it cooks off. Great by itself, better with crisps.
