Mango-Ginger Pancakes

Description

Pancakes made with mango rum and ginger -- a delightful side to savoury fried vegetables.

Ingredients

  • 1 tablespoon Oil (Vegetable)
  • 1 teaspoon Baking Powder
  • 1 cup Flour
  • 0.5 cups Water
  • 0.5 cups Parrot Bay Rum
  • 1 tablespoon Sugar (granulated)
  • 0.25 teaspoons Ginger

Cooking Instructions

* Preheat griddle to 300F/150C
* Mix dry ingredients in 1L bowl.
* Mix wet ingredients in measuring cup
* Blend wet ingredients into dry ingredients a bit at a time, until a relatively smooth batter results.
* Pour onto griddle to create pancakes of the desired size.
* When the middles are bubbling, flip pancakes and cook for about the same amount of time on the other side.

Makes about 6 mid-size pancakes
