Make bread as you do, through the first rise. Grease and flour a baking pan. Tear dough into quarters. One at a time, press each quarter flat on the pan, adding more flour as needed to prevent sticking to your hands, and put 2T cheese, 2T beans, 1T minced onion, 1T chopped chile, ~1-2T diced tomato, 1T chopped cilantro on the middle of the dough. Fold the edges up and press them together, then flip the bun over and move on to the next. When all four are sealed and seam-side down, bake for 15 minutes @ 425F/220C, then turn the heat down to 375F/190C and bake another 10 minutes.
