Mocha Mint-Chip Pancakes

Description

Pancakes with coffee and amaretto, sprinkled with chocolate and mint chips.

Ingredients


  • 1 tablespoon Oil (Vegetable)
  • 1 teaspoon Baking Powder
  • 1 cup Flour
  • 0.5 cups Half & Half
  • 0.5 cups Amaretto
  • 1 tablespoon Coffee (instant)
  • 0.5 cups Chocolate-Mint Chips

Cooking Instructions

* Preheat griddle to 300F/150C
* Mix dry ingredients, except chips, in 1L bowl.
* Mix wet ingredients in measuring cup
* Blend wet ingredients into dry ingredients a bit at a time, until a relatively smooth batter results.
* Pour onto griddle to create pancakes of the desired size and immediately sprinkle with chips.
* When the middles are bubbling, flip pancakes and cook for about the same amount of time on the other side. (These stick to the griddle because of the chips, so be careful.)

Makes about 6 mid-size pancakes.
