Description

Spiced eggplant, other veg, and breadcrumbs

Ingredients

  • .5 teaspoons Salt
  • .25 cups Water
  • 8 ounces Mushrooms (Crimini)
  • 1 teaspoon Pepper (Black)
  • 6 Tomatoes (Plum)
  • 2 Eggplant
  • 3 Onions (White)
  • 2 Garlic (Clove)
  • 3 Bell Pepper (unspecified)
  • .5 cups Oil (olive)
  • 2 tablespoons Tomato Paste
  • .25 teaspoons Dill
  • .25 teaspoons Basil
  • .25 teaspoons Oregano
  • 1 cup Breadcrumbs (Italian)

Cooking Instructions

- Dice vegetables
- Sauté onions, garlic, and mushrooms in oil, until onions are translucent.
- Add eggplant, peppers, seasoning, and 1/4c water.
- Cover and cook until eggplant is soft
- Add tomatoes. Cook 5 min.
- Add tomato paste & breadcrumbs. Add more water as needed to reach desired texture.
