Ingredients


  • 3 tablespoons Oil (olive)
  • 1 each Onions (Yellow)
  • .25 teaspoons Salt (Kosher)
  • 2 pounds Potatoes (red)
  • .25 teaspoons Pepper (Black)

Cooking Instructions

0. Cut onion into slivers. Dice potatoes.

1. Heat the oil in a large, heavy skillet, preferably cast iron, over medium heat. Add the onion and cook until limp, about 5 minutes.

2. Add the potatoes, salt, and pepper. Turning the potatoes over frequently with a metal spatula, cook until crusty, about 15 minutes.
